Vegan Macaroni and "Cheese"

1 1/2 cups seasoned bread crumbs
1 cup raw cashews
2 1/2 cups water
1 2-ounce jar pimentos
2 Tablespoons fresh lemon juice (I use the bottled kind and it works just fine)
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons salt (I make these scant teaspoons because I try to cut back on salt)
3 cups macaroni (uncooked)
I also add a tablespoon of Nutritional Yeast to give it a little more of a cheesy flavor and to help get our vitamin b-12.

Sterilize raw cashews by placing them in boiling water for a few minutes. drain.

In a blender, combine all ingredients except macaroni and blend until very smooth. I recommend blending the cashews with 1 cup of the water until they are smooth, and then adding the rest of the ingredients, otherwise it's hard to get the nuts to blend, and the mixture can be lumpy and nutty.

Cook and drain macaroni according to package directions.

Mix cashew/pimento mixture into the cooked macaroni and serve immediately.

*As an added touch I like to add 1 package of Morning Star Farms "Chicken Strip" meal starters. I just take them out of the freezer, break them into bite sized pieces and throw them in with the whole mixture. Since they aren't real meat, they don't have to cook for a long time. The heat of the mixture (as long as it's hot) heats the "chicken" up enough. You can find them at most Walmart's in the freezer section (near Boca Burgers)
